This past weekend, I occupied myself during a lengthy flight by watching Meghan Markle’s latest Netflix series. The journey opened my eyes to various aspects of her life, particularly the fact that her official title is the Duchess of Sussex, and it left me pondering the charm of her home in Montecito, California. There, she basks in sunshine, cultivates a garden filled with herbs and vegetables, harvests honey from her own hives, and entertains a variety of illustrious guests, from celebrated chefs like Alice Waters to comedians like Mindy Kaling.
The unmistakable star of With Love, Meghan is perhaps the Le Creuset braiser that features in numerous scenes. I own this exact piece of cookware and can affirm its utility in the kitchen. While Markle might utilize hers for preparing dishes like focaccia and chicken tinga, I primarily use mine for searing chicken and caramelizing vegetables. Clearly, the versatility of this pan lies in the creativity of the cook.

Crafted from enameled cast iron, Le Creuset’s braiser offers a robust construction that excels at heat conduction and features a non-reactive coating that resists rust. In simpler terms, this type of cookware provides a cooking experience that is user-friendly and easy to maintain. Although it is not nonstick, users need to heat it thoroughly and add sufficient fat to achieve optimal browning before attempting to flip foods. With a bit of experience and patience, mastering this technique becomes second nature.
The design of the braiser—with its sloped walls and broad base—makes it perfect for shallow frying, roasting, and other cooking methods. In contrast, a Dutch oven, which has higher sides, is more suited for dishes that require a lot of liquid like soups and stews. Markle frequently incorporates both types of cookware in her kitchen, similar to my own practices. While one could manage with only one of these, having both ensures a seamless cooking experience.
Although I may not share Markle’s enthusiasm for adorning her dishes with edible flowers or spending extensive time on fruit arrangements, I wholeheartedly agree on the merits of her chosen cookware. It’s a high-quality item that stands the test of time.
