A Conversation with Chef and Author Clare de Boer

Clare de Boer is a multifaceted talent in the culinary world, renowned not just as a chef but also as a writer and the visionary behind two trending restaurants. Her remarkable contributions to gastronomy have earned her four nominations for the prestigious James Beard awards.

Clare gained recognition with her co-founded establishment, King, a stylish yet approachable bistro located in New York City’s West Village. Building on this success, she later opened Stissing House, a tavern in Pine Plains, NY, that puts a unique twist on early American dining. Clare’s culinary prowess is often highlighted by details such as the ever-coveted butter offered at her restaurants. Her recent venture, alongside her husband Luke, is Roseland, a company that focuses on celebrating American hardwoods through furniture design. For more information about Roseland, you can read about it here.

Whether it’s a recipe, a restaurant concept, or even exceptional window coverings, Clare’s creations consistently appear both effortless and invigorating. As she has mentioned in the New York Times, her menu at King is designed to be as expressive as poetry.

In this edition, Clare takes a moment away from her diverse projects to reveal some personal secrets about her go-to kitchen tool, an upholstery tip, and a reliable fashion item. Here’s what she shared:

You’re invited to dinner. What’s your go-to gift?

A bottle of fresh-press olive oil.

What podcast or playlist do you put on when you need inspiration?

Bretti Folk—a playlist my husband curated when we moved into our first home in Hudson Valley six years ago. It features a blend of nostalgic songs from his childhood and new favorites we’ve found together.

Which Instagram account do you go to for design inspiration?

@shakermuseum.

What’s on your bedside table?

A large carafe filled with cold water, a photo from my wedding, and a hair clip.

What’s a film or TV show whose aesthetic has stuck with you?

The kitchens featured in Nancy Myers’ films.

What has been your best house upgrade?

Installing rainfall showerheads, enhancing the frequency of cleaning air filters, and having a Rush Matters hand-plaited mat that is chemical-free and reminds me of a stroll through tall grass.

Is there a simple or budget-friendly design move you wish you’d known sooner?

Instead of purchasing new upholstery fabric, I recommend making slipcovers from thick linen bed sheets. This approach is more economical and offers a relaxed, airy aesthetic.

My favorite sheets are…

The well-loved ones that have been sun-dried on a clothesline.

My unpopular design opinion is…

Preserve original features of your home, even those that may seem unattractive. Trends may shift, but the integrity of period details deserves to be maintained.
