Growing up in a family that cherishes hot dogs, the arrival of summer weather often means it’s time to fire up the grill. While I enjoy a classic hot dog topped with mustard, there are moments that call for a more elaborate version. Enter the gourmet sausage. These sausages are butterflied, meaning they are sliced open along the length to create two sides that cook evenly while enhancing the flavor with a delightful char. One side is layered with cheese, which melts beautifully when sandwiched in a bun, while the other side creates a perfect pocket for a refreshing and crunchy celery relish. However, if butterfly preparation isn’t your style, grilling the sausages whole and melting cheese directly on the buns is equally delicious.
For optimal results, choose hot dogs that are labeled as “fully cooked.” These types work best for this cooking method, while fresh sausages—those made from raw meat encased in a sausage skin—tend to be more challenging to butterfly and grill properly. As a suggestion, opt for fully cooked beer brats instead of fresh bratwurst; the former is perfectly suited for this recipe.
