The Pumpkin Craze: A Seasonal Favorite
As the arrival of fall is greeted by a multitude of autumn-inspired flavors, pumpkin reigns supreme, especially since the introduction of Starbucks’s popular Pumpkin Spice Latte (PSL). Each year, as September arrives, the cultural shift toward pumpkin-flavored treats becomes evident, taking over social media feeds and local cafes alike. One notable example from this season is a recent TikTok video that encapsulates the essence of autumn.
In her engaging video, Steph Grasso, MS, RD, introduces a delightful twist on the traditional pancake: pumpkin pancakes. This recipe not only embraces the seasonal spirit but also offers a substantial nutritional profile, featuring 30 grams of protein. Experts like gastroenterologist Dr. Lisa Ganjhu emphasize the importance of protein in the morning, noting its role in enhancing feelings of fullness and providing several health benefits, including muscle recovery and cellular repair. Research suggests that breakfast protein intake should ideally range from 20 to 30 grams, making Grasso’s creation a sound choice for a morning meal. Additionally, pumpkin boasts an array of nutrients such as fiber, vitamin C, and calcium, contributing to digestive health, skin vitality, and bone strength.
With autumn leaves falling and cooler weather setting in, the idea of enjoying a warm breakfast becomes increasingly appealing. Intrigued by the recipe, I examined the ingredient list shared in the TikTok video: ⅓ cup of pumpkin, two eggs, 1 cup of oats, ⅓ cup of cottage cheese, 1-2 tablespoons of maple syrup, and 1 tablespoon of pumpkin spice. While the preparation seemed manageable, I did harbor some reservations about how the final dish would turn out. My limited experience with pumpkin recipes, combined with an aversion to cottage cheese—due to its peculiar texture and aroma—made me hesitant.
Determined to give it a chance, I gathered the ingredients and set to work in my kitchen. After measuring everything, I placed it into a food processor, eager to see how it would come together. As I activated the machine, the ingredients transformed into a smooth, pale orange batter dotted with oatmeal and crushed pumpkin pieces. Visually, it appeared surprisingly similar to the pancake mix I was accustomed to, generating a sense of cautious optimism about the final outcome.
As I prepared to cook the pancakes, I reflected on the fusion of flavors and nutrients that pumpkin brings to the table this season. With its rich taste and numerous health benefits, pumpkin is not just a fleeting autumn trend, but a versatile ingredient that can be enjoyed in a variety of dishes throughout the fall.
