The Marabi Club stands apart from Johannesburg’s previous dining norms, where high-end dining often equated to predictability and a stifled creativity in both flavors and presentation. Chef Freddie Dias emphasizes that dining here is about capturing the vibrant energy of the venue: “We offer contemporary cuisine uninhibited by a specific style. It’s simply Marabi food.” The menu features a diverse range of dishes like Thai oysters with nam jim, lamb belly flatbread with zhug, and deep-fried sliders served on traditional Zulu dombolo. Looking to the future, Marabi is planning to expand with a secret second location set to unveil in late 2025.

Another compelling initiative is Tasty Sundays, a recurring dining event that combines exceptional food, fine wines, and vibrant live music. The offerings at Tasty Sundays are always seasonal, ensuring a fresh and exciting atmosphere.

Renowned dining establishments, such as Basalt, where chef Candice Philip has attained multiple accolades, have embraced innovation through the introduction of guest chefs and flexible dining formats tailored to changing circumstances. Nick Scott, the chef-owner of Glory, reflects on how the pandemic reshaped the restaurant landscape: “It revealed that you don’t need a massive budget to open a dining establishment and encouraged the exploration of non-traditional concepts.”

The Persistence of Reinvention

Five years later, Glory continues to thrive amidst its unique charm. Hidden between an antique store and a quaint deli in Parktown, this restaurant is subtly marked by a small black sign and bamboo blinds, easily overlooked. Its approach shuns the conventional in favor of direct communication through word of mouth. Initially a pop-up, Glory garnered a loyal customer base while moving through various temporary locales before solidifying its permanent residence in 2024. Scott, along with designer Caroline Olavarrieta, has curated a space that is intimate and slightly secretive. The space serves a six-course tasting menu where all ingredients are sourced from local producers. With a focus on plant-based dishes, Scott challenges traditional meat-heavy options, crafting meals such as cured tomato dumplings and olive sashimi tacos, followed by an Indian-inspired dessert like pistachio kheer. “We create our menu based on seasonal freshness. People will discover us if they’re meant to,” Scott notes.

At The Marabi Club, one can savor dishes such as slow-braised beef short rib complemented by smoked mash and roasted carrots, showcasing the blend of contemporary techniques and rich flavors.

This atmospheric basement, draped in deep blue and red velvet, contrasts starkly with its lively, modern menu that evolves regularly, ensuring a fresh experience with each visit. Current offerings feature modern Mexican delicacies like beef birria tacos and coal-fired aubergine, hinting at an impending transition to a Peruvian theme.

As Johannesburg continues to evolve, so too does its dynamic food scene, reflecting a bold stride into the future while honoring its rich, historical roots.
