- ¼ cup all-purpose flour
- 1 small head of cauliflower (about 1 lb.), trimmed and cut into small florets
- 8 baby Yukon Gold potatoes (about 10 oz.), scrubbed and cut into eighths
- 1½ cups heavy cream
- 5 cups water
- 2 additional tablespoons unsalted butter
- 2 cups oyster crackers
- 2 teaspoons Old Bay seasoning
- 2 tablespoons white or yellow miso
- Freshly ground pepper, to taste
- Finely chopped chives or scallions, for garnish
- Lemon wedges, for serving
Cooking Instructions
Step 1: Sauté the Aromatics
In a medium Dutch oven or similar heavy pot, melt 3 tablespoons of unsalted butter over medium heat. Incorporate 1 large onion, finely chopped, along with 4 celery stalks, thinly sliced, and 6 garlic cloves, finely chopped. Add in 2 teaspoons of chopped thyme and 2½ teaspoons of kosher salt. Stir the mixture periodically until the onion becomes translucent and the celery is tender, which should take around 6 to 8 minutes.
Step 2: Combine the Vegetables
Next, sprinkle ¼ cup of all-purpose flour over the onion mixture and stir for about one minute to toast the flour lightly. Introduce 1 small head of cauliflower (cut into small florets) and 8 baby Yukon Gold potatoes (sliced into eighths) to the pot. Pour in 1½ cups of heavy cream and 5 cups of water. Increase the heat to a simmer and continue cooking, stirring occasionally, until the cauliflower and potatoes are soft and the soup has thickened slightly, which should take approximately 20 to 25 minutes.
Step 3: Prepare the Crackers
While the chowder simmers, heat another 2 tablespoons of unsalted butter in a medium skillet over medium heat. Add 2 cups of oyster crackers and cook them, stirring frequently, until they are golden brown in spots, which should take about 5 minutes. Remove from heat and sprinkle in 2 teaspoons of Old Bay seasoning, tossing the crackers to ensure they are evenly coated.
